Kristofor Sandholm, head chef and owner, was born in Virginia in 1977. He was raised in Lehigh Township and attended Bethlehem Vo-Tech for three years concentrating on culinary arts. During this time, Kris started working for a local catering company, Family Summer Home, as a dishwasher. He graduated from Northampton High School in 1995. Immediately upon high school graduation, Kris attended The Florida Culinary Institute located in West Palm Beach, Florida; he graduated in December 1996.

After culinary school, Kris returned to the Lehigh Valley where he worked in the industry for two years. He felt like he wanted to make a difference; Kris enlisted in the United States Marine Corp where he served for four years in the Infantry. He was Honorably Discharged and relocated to Vail, Colorado working in an upscale restaurant, Spendido at the Chateau. After one season in Colorado, Kris moved back to the Lehigh Valley and met his wife, Allison. He immediately started working at Starfish Brasserie in January 2004.

Since taking over ownership of Starfish Brasserie in early 2009

Chef/ Owner Kristofor Sandholm has manifested his vision of maintaining an Ecofriendly sustainable Farm2Table Restaurant establishment. Starfish buys, prepares and serves only the freshest Sustainable Fish and Seafood, as well as the Freshest Local Organically Farmed and Raised Ingredients. Sustainable means there is no involvement in overfishing or in causing any harm to the environment/ the ocean’s ecosystem. The ecofriendly theme is also reflected in the Wine List which features a selection of Organic, Biodynamic, and Sustainable wines. Starfish Brasserie has been honored with the Wine Spectator Award of Excellence, recognized for featuring an exceptional and affordable Wine List. This, due to the collaboration of Chef Sandholm and Wine and Beverage Manager/ Lead Bartender, Luis Loayza. Luis has also executed an ambitious Beer Menu with a tap system that offers new varietals weekly, and a tantalizing Martini/ Cocktail Menu.
