Grilled Alaskan Salmon with Roasted Corn Salsa
4-6oz Wild Alaskan Salmon Filets
6 ears of sweet corn (shucked)
2 Tomatoes peeled seeded and diced
1 jalapino pepper seeded and diced small
1/3 cup diced red onion
1/4 cup chopped fresh cilantro
1/4 tsp chopped garlic
1/4 cup fresh squeezed lime juice
1/4 extra virgin olive oil
salt and pepper to taste
1/4 tsp of ground cumin
Roast the corn on a grill or on a sheet tray in a 400o oven until lightly brown. Let the corn cool and romove from the cob. Put the corn and all the other vegetables an a bowl and mix in the oil and the lime juice. You should taste all of the flavors of the ingredients in the salsa.
Brush the Salmon with a little oil season with salt and pepper and grill for 3-4 mins per side depending on the thickness of the salmon.
Place the salsa on a bed of fresh salad greens top with the salsa and place the grilled salmon on the top.
